Highlights of the day
Through vineyards and wine cellars
On day one, we will visit a typical Karst wine-cellar to sample some exceptional local wines, fruit of the Karst’s red soil. Having followed a stunning, panoramic footpath through woods and vineyards, we will arrive on foot, slowly and gradually. This is the ideal way to approach the Karst territory, which shapes the character of the wine. The tour begins at the farm where we will be shown the family traditions and winemaking methods that, over generations, have transformed these grapes into exquisite wine. We will learn about the natural cycles of wine and the ways of working in the vineyards. This will be followed by a guided tasting of the vineyard’s house wines accompanied by local culinary delicacies.
Karst hospitality
In the afternoon, our trek continues to an ancient Karst village where we will spend the night in a family-run farmhouse. The intimate atmosphere of the typical Karst farmhouse will enable us to get to know the local community first-hand, in an unhurried way, meeting local farmers and savouring the flavours of their home cooking. Here, we will enjoy a typical Karst supper prepared with local ingredients and made using traditional recipes.

Highlights of the day
The charm of a medieval village
We start the day with a hearty breakfast of local produce, which will enliven and energise us for the day ahead. Our journey on foot will continue through the Karst plateau. We will take a gentle stroll up to the medieval village of Štanjel with its hilltop castle, which has overlooked the Karst plateau for centuries. We will spend time visiting the ancient part of the town and strolling through its narrow streets, now home to numerous artisan workshops and local artist studios. From various viewpoints, we will take in some spectacular views as we overlook the plateau and look back on how far we have travelled.
Karst ham and its secret ingredient
Having bid farewell to the beautiful village of Štanjel, we will return to the footpaths to immerse ourselves in nature once again. Our gastronomic tour concludes with a visit to a traditional ham factory. This family-run establishment continues the centuries-old tradition of meat seasoning. The drying process is completely natural, performed using wooden racks, assisted only by the Karst’s Bora wind. After the tour, we will sample flavourful home-cured meats and try our hand at slicing the ham, thus adding our own touch to its intense flavour. Our journey through the flavours and aromas of the Karst plateau concludes here.
